Is there a FAQ about the nature of wait times? I saw some weirdness yesterday, reality wasn't even close to what was posted.

Not that I know of.. The idea is simple though. People inside of the park are posting wait times as they see them. The times are pretty accurate usually. I know that park like the back of my hand. I know where all the bathrooms are and churro carts. I had to learn the churro cart the hard way tho. The tomorrowland churro is usually where I get mine but they close early and I hadn't had one yet and I was crying because all I wanted was a churro (3months preggo at the time so it was very important) thankfully we found one along the Roa right near splash that is still open till close.
