We always go in jan. The weather is great crowds are very low and if Disney follows pattern they usually offer free dining. But I would go mid to late jan because the beginning is marathon weekend and prices are higher and a lot more people. I think I read for this jan the date of the weekend are 10-13. Hi everyone!! I hope it's been a wonderful week so far! I have a question.. If we book a trip soon for Jan or Feb 2013 can we change if any new offers for that time open up in the fall? Last year I booked in October and there were discounted rooms and free dining plans. Just want the best deal! Thanks! : )
Yes you can get the better offer if one comes up. If you book with a travel agent, they will actually contact you with the new offer. If you book through Disney you will have to keep an eye on the upcoming offers on your own. - DizneyGirl

Yep, same thing just happened to us actually... We are checking in during one of the weeks they just announced free dining on (our trip was booked/paid in full on May 1 through the Disney site). So, when I heard the free dining announcement yesterday, I called Disney to weigh our options, and then discussed the potential savings with the hubs... We would have had to move from AoA (LM) to Pop (because LM isn't included in the deal), and do an upgrade from quick service to deluxe dining (to keep all of our existing reservations in tact with no extra monies out of pocket during the trip). The total savings was only about $380. Compared to the overall price of our package, we decided it wasn't worth it to try and move everything around (I guess it is somewhat difficult for Disney to transfer your Magic Your Way Package once you have booked/paid for your flights - though, IT IS doable). So, absolutely, if something comes up after you have booked your package, you can call them to get the refund of the difference should you qualify and choose to do so. - mrsincredible
