Missing EPCOT something awful! This past trip was the first time I did some exploring while the kids visited each Kidcot station. I had no idea there was so much stuff to see! All these years just walking the circle around the countries and not understanding why EPCOT is a favorite of so many. I have been missing out! Can't wait to explore it again on June 5 -- wish I had more time than just a day!

Questions to those who have been to Pioneer Hall and experienced the Hoop Dee Doo Revue: We have ressies on June 4, 2013 using 2 dining credits and thereby were placed in Category 2 seating. Is it better to call and change to Cat 3 or keep the ressie as is? I have read the best experiences with the cast occur to those in Cat 1 or 3, and that Cat 3 in the balcony is actually better seating for viewing purposes than Cat 2. Please help, thank you!!

Good morning, friends!! Back to work we go today after a wonderful weekend of family time, holiday baking, and Christmas movies. We never got around to putting up our second tree - our family tree of homemade and extra special ornaments. So late last night, I decided to combine our trees and add all the other ornaments to our downstairs tree. I love it!! Here's one of my fav's, an ornament my Dad purchased when I was 3!! Mr I said, "Little full, lotta sap!" when I asked him how the tree looked. Full of love!! π
Happy Friday!! Gonna be busy as a bee over the next few days with Josh's graduation and putting up our family tree today, parents' Christmas party Sat, and holiday baking day Sun. May not be on a lot, but thinking of you guys!! Have a great weekend!!
Almost Friday!! Mr I and I are off tomorrow. Gonna head to Little Rock to watch our oldest, Josh, graduate from the 22-week quasi-military youth program at Camp Robinson with the AR National Guard. He'll be home just in time for Christmas!! So incredibly proud!! Come on and raise the roof with us to celebrate!! π

Morning, friends!! Is it Friday yet?! Thanks to a tip from one of you guys, after the Indiana Jones show at HS, we waited until the crowds thinned out, went down front and the kids got to meet 'Indy' and get their picture with him. Another first for us this trip. They thought that was SO cool! When we left, Jonah said, "Why's he all sweaty?!" Haha, cuz it's hard work portraying the great Mr. Jones, son!!
Holiday Recipe Sharing: Lemon Cake Mix Cookies -- if you like lemon, you'll LOVE these melt in your mouth cookies!! Ingredients: 1 box Lemon Cake mix, 1/2 cup oil, 2 eggs, lemon frosting. Directions: Mix ingredients together on low speed with blender until taffy like, drop onto greased cookie sheet in small round balls, bake at 350 for 10 minutes. Let cool, sandwich together with lemon icing. What I really love about this recipe is, you can use any cake/icing flavor combination you like! Spice, German Chocolate, Strawberry, Key Lime, etc! You can also add nuts or baking chips (chocolate, peanut butter, butterscotch, etc!). So easy, and so good!! I have won holiday baking contests at work with these bad boys!!
Holiday Recipe Sharing -- Puttin' on the Ritz Cookies -- These are my boys fav and they help me make them every year! Sandwich 2 Ritz crackers together with peanut butter, melt almond bark as directed, dip one side, lay on wax paper to set. Repeat process with chocolate bark on opposite side of cookie. This year, I am going to try adding red food coloring to do a red/white version. A must try either way, so tasty and SO easy!!
I gathered from previous posts a while back that a lot of us like to bake and make holiday goodies around this time of year -- Disney inspired treats or otherwise. Wouldn't it be fun to share our favorite recipes?! I know I would love to see everyone's favorites!! I'll start with one that was just passed on to me today from a friend that I will be making every year from now on, so delicious!! β¨β¨β¨ Twisted Peppermint Bark β¨β¨β¨ Ingredients: 3 bags milk chocolate chips, 1 cup broken pretzel sticks, Bob's Soft Peppermints (3/4 cup chopped & 1/2 cup chopped, 12 mint Oreos broken. β¨β¨β¨ Directions: Put 3 bags of chips into a bowl, microwave 2 minutes until shiny, stir until creamy, add pretzels, 3/4 cup Peppermints, and Oreos. Stir, and dump into 11x13 jelly roll pan covered with buttered parchment paper. Spread and top with remaining Peppermints. Wait 6 hours or overnight until hardened and break into pieces.
