Hey fellow c33 peeps.. I am looking for some veggie options for dinner.. Getting sick of salads and steamed artichokes.. Thank you!

Ok. I made a veggie only version of chicken Parmesan. I sauted carrots, onions, garlic, squash, bell peppers, (tomato would be good, I don't care for them), brocolli, and mushrooms in a pan until tender. Then I made an Alfredo sauce but you could buy one if you wanted. I then tossed the veggie mixture in it. Top with some parmesan cheese and your good to go. You could add grilled chicken and/or pasta if it's on your plan. I liked it. - Mrs.mouse  420.9 #306 8:51PM

If you want a traditional sauce it's equal parts butter, cream, and Parmesan cheese. You can buy a jar or store version. Today I made an Alfredo sauce using 1/2 cup cream cheese, 1/4 cup sour cream and 1/4 cup cream and some cheese. That was crazy good too. Roasted veggies are oh so good! My latest veggie has been Brussel sprouts either roasted with garlic and olive oil or shredded and sautéed (bacon optional) - NikkiMickey  1588.8 #49 9:06PM
I love brussel sprouts but am a lousy cook. Do you shred them with a grater, or just slice thin? And then do you just toss them in the olive oil...last question...what temp and how long in the oven? TIA! - msdizmaui  519.0 #224 11:38PM

We love grilled kabobs! Your choice of veggies (I like bell peppers and onions) with a few pieces of chicken on a stick. We put EVOO and lemon juice on them, but you could season with whatever you want, really. - Spoonful_O_Sugar  436.3 #285 7:50AM

Grill or roast almost any veggie in evoo and a little sea salt. I'm hooked on a big bag of kale from Costco. Toss with oil and salt in the oven at 400 for 15-20 min and it's like a yummy chip snack. Good luck :) loved all the ideas :) - piratelife4me  336.6 #447 4:09PM

Do you eat eggs? I love to make a veggie packed quiche for dinner. It's so simple and always turns out delicious! You can substitute 2% milk for heavy cream and not tell the difference! I also love roasting veggies, brings out so much flavor. Then mixing them with whole grain pasta and olive oil. - LisaMouse7531  409.1 #318 10:06AM

Quinoa w/veggies. Just follow directions on quinoa package to cook, you can use chicken broth, veggie broth or just water for your liquid. Add steamed or roasted veggies. - mswendybe  193.4 #1715 7:56AM
