In theory, dulce de leche is a custard. Creme brulee is just a custard with the sugar melted on the top (bruleed). Flan is similar, except that the way it is cooked lets you pop it out of the mold. I'm guessing they cooked it like a flan, and just barely bruleed the outside with the torch.. It's pretty. Dulce de Leche is NOT a custard. Flan is a custard. Dulce de Leche is more of a sweet "milk jam" so to speak. It's a spread or used to sweeten different foods like cakes, candies, ice cream. It's similar to caramel used in ice cream sundaes. - Romec123aKaSmartyPants  751.8 #251 8:32AM
