champers - it's hard to explain - but it's a yeast extract that's dark and smooth and salty. It tastes almost like a bullion I guess. Legend has it that it's the by-product of beer manufacturing and was developed during the war to stop it going to waste as it's very high in B vitamins. That's dubious, though. - BLG
