I make a pretty mean Artichoke Dip. 1 cup real mayo, 1 cup sour cream, 1 pkg cream of Leek soup mix, 1 clove garlic, 1 can artichoke hearts in water (drained & chopped), 1 cup shredded mozzarella cheese. Very quick and easy dinner on nights I'm feeling lazy..... boil 2-3 cups of large or small pasta shells (we use whole wheat pasta), boil 2-3 boneless skinless chicken breast (I use 1 chicken breast per cup of pasta -- for anyone needing more of the recipe) once cooked, cube chicken and add to cooked pasta... add 1 sm can of Cream of Mushroom soup, 1 cup shredded cheese (we use cheddar and jack mix), chopped olives (optional and to your preference), pepper.. salt.. and a little bit of garlic powder to taste (we even add red pepper flakes for a little kick). We also add brocoli -- but that's totally optional. If the pasta seems too dry and not creamy enough, add more cream of mushroom. Adjust the recipe to your taste and preference. I don't measure when I cook... at all... unless I'm following a strict recipe... so I tried to guesstimate. Halve 3 lb tomatoes n squeeze out seeds, chop top off of whole garlic, put all on cookie sheet n spray w/ olive oil. 350 for 30 min. Pour off juice but save and flip tomatoes. 30 more min. Skins ce right off tomatoes. Squeeze out garlic cloves and throw in food processor w/ tomatoes. Add juice to desired thickness and some balsamic. Best tomato sauce ever! - Kendall  10.4 #9619 5:07PM
Here's another one... this one seems super fancy, but its SO simple to cook. Preheat oven to 375. You'll need: Boneless skinless chicken breast, asparagus, mozzarella cheese sticks. Use however many slices of boneless, skinless, chicken breast you'd like....... slice it horizontally down the middle (like cutting a bagel). Peel the mozzarella cheese stick into little pieces, Add 4-5 sticks of asparagus & cheese in between the cut slices of chicken. In a baking dish, put a little bit of chicken broth, white wine, and about 3 tablespoons of butter (enough to cover the bottom of the pan about 3/4 inch). Lay the chicken in the pan, spice the top of the chicken w/ pepper, salt, and some parsley flakes. I also put a little bit of butter on top of the chicken too. Cook until chicken is cooked through (usually 20-30 minutes). I serve with brown rice risotto or some sort of pasta. It looks super fancy and difficult to cook but its so easy and delicious! - michelledork  696.2 #245 5:11PM

Strawberry Spinach Salad Ingredients- 1/2 cup sugar, 1/2 cup slivered almonds, 1/2 lb fresh spinach (washed and dried), 1 cup strawberries (hulled and sliced), 1/2 cup feta cheese (crumbled) Dressing- 2/3 cup canola oil, 1/3 cup vinegar, 1/3 cup sugar Instructions- place sugar in heavy saucepan & cook over med heat until melted. Add almonds and continue cooking until mixture is light brown. Remove from heat and immediately pour mixture on alum foil to cool. When cool break mixture into pieces. Combine dressing ingredients in a small container with a tight fitting lid. Shake until well blended. Place spinach, strawberries, feta, and sugared almonds in large salad bowl. Pour dressing over salad and toss lightly. A few tips- a lil dressing goes a long way, try a lil at a time and toss until you have the coverage you want. You can substitute mont jack cheese or mozz cheese for the feta cheese. Also you can buy the over the counter sugared almonds or just use plain slivered or sliced almonds and it's just as good. I make some really good sour cream chicken enchiladas. I steam cook 3-4 large boneless skinless breasts. You can boil or put on crock pot just as long as it's shreddable. Once cooked shred the chicken and set aside. Save the broth. Mix in a bowl 1 can of cream of mushroom soup, 1 16 oz container of sour cream and 1 small can of diced green chilis. With a tbsp of the mixture coat the bottom of a rectangular cake pan. Now using the broth, dip six corn tortillas and cover bottom of the pan. Grab your mixture and add the shredded chicken and mix well. Add half of the mixture and top with cheese. Repeat layer using 6 more tortillas and the mixture and top with cheese. Bake on 425 for about 20 as long as cheese melted. They are so good! Enjoy. Oh and you can top with sliced green onions if you want and season the chicken with salt pepper andgarlic prior to cooking. - DizGeek  453.6 #434 5:47PM
Super simple but yummy pasta. For two people: 1/2 package of whole grain fettucine noodles (u can actually use whatever pasta u like, shells work good too), 1 jar of Ragu cheesy garlic sauce (it's white), 1 bundle of asparagus (u can also use broc), 1 tomato, about 6 slices bacon. Boil the pasta, steam the asparagus (after cut into small pieces), cook the bacon however u like just make sure it's crispy. Add the sauce and asp. together in saucepan to heat, pour over noodles. Tortellini Vegetable Soup 2 tablespoons olive oil, 1 medium onion(chopped), 2 small zucchini(diced),2 medium carrots(peeled and diced) 5 and half cups chicken stock, 1 teaspoon dried basil, 1 bay leaf, 1 can crushed tomatoes, one half teaspoon salt and 8-9 ounces fresh or frozen tortellini. Heat oil in medium soup pot. Add onion,zucchini and carrots.Saute over medium heat for 8-10 minutes, stirring often, until onion is soft translucent. Add stock , basil, bay leaf, tomatoes, and salt to the pot.Increase the heat and bring mixture to a low boil. Cook it for 2 minutes,then reduce the heat and let it simmer for 5 minutes longer. Dinner... hmmm well how about desert!! You will need 2 packages Hawaiian sweet rolls (Enough to cover the entire pan) 1 pound butter (real butter) 1 pound brown sugar, 2-3 ripe bananas.(Pre heat over to 350 degrees) Take you sweet rolls and cut them in half, line the pan with the bottom half of your sweet rolls and set the tops to the side. Peel and slice the bananas, in a large (frying pan) combine 1/2 pound butter, 1/2 pound brown sugar and the sliced bananas. Cook over medium heat and stir constantly. Now once the you see the butter and brown sugar combine but before it starts to bubble you need to remove it from the heat and pour it over the bottom halves of your sweet rolls you have lined in the pan. Now take the tops of the sweet rolls you have set aside and place them on top. Combine the remainder of your butter and brown sugar in your frying pan and melt on medium heat. Just like before remove it before it starts to bubble to much. Pour it evenly over the top of the sweet roll tops in your pan. Place the pan in your oven at 350 degrees for 10-15mins (or in tell the tops are just starting to get a nice brown shine to them). Yeah I invinted this thanks to working with access to a kitchen, having cooks that loved my cooking (Even though I wasn't a cook) and the fact that we served our sliders on sweet rolls so we always had extra ones on the verge of being stale lol I hope you enjoy it, it has to be severed hot though or it's not the same. You can also make a sauce for the top with- 1/2 quart heavy whipping cream, 3 cups sugar, and two table spoons cinnamon. Combine in a pot over high heat, whisk together and let simmer for 15-20mins to reduce. Once it cools down it will be thicken and taste really good. It's a sweet cream cinnamon sauce (Might be other ways to make it but that's how I do it lol). - Sam241  475.6 #404 7:57PM

My kids call these Spaghetti Sandwiches even though there is absolutely no pasta. Lol! Get a loaf of french bread and slice it long ways. You want the bottom half to be thicker than the top. Dig the middle out of both sides so you have two long bread boats. Fill the bottom half with shredded Mozzerella cheese. Brown 1lb of ground beef and drain the grease. Mix a jar to two of Pizza Sauce in with the ground beef and heat it up in the skillet. Pour the meat sauce mixture in te bottom half over the mozerella cheese. Then cover the meat sauce mixture with another layer of mozerella cheese. Put the top piece of bread on so it looks like a huge sandwich. Wrap the whole thing in aluminum foil and bake at 350 for 25 mins. Remove from oven and let sit for five mins. Slice like french bread and ENJOY! - Mrsblue  693.1 #246 9:22PM

Stuffed bell peppers vegetarian (or ground turkey meat for the non veggies). Two green bell peppers per person. Broccoli rice from rice r roni, and meat of choice (veggies use mormingstar crumbles). cook meat (1/2 pound per 5"4 bell peppers) and rice seperately, cut out center of bell peppers. My family loves French bread pizza... 1 loaf of French bread, sliced long ways, put both halfs on a cookie sheet, spear pizza sauce on both sides and top with favorite pizza toppings. We love cheese, pepperoni, chicken, olives, mushrooms, bell peppers. Bake in oven 350 until heated through all the way. Slice and enjoy! Easy, fast and cheap! My other go to favorite crock pot lasagna, you need a crock pot and a plastic crock pot liner to line it. Brown 1 lb hamburger seasoned well, put a small can tomatoe sauce in the bottom of crock pot line with uncooked lasagna noodles add 1/3 hamburger, 1/3 jar spagetti sauce, 1/3 jar Alfredo, sprinkle with mozzarella repeat putting noodles and cheese on top. I'm sorry, I use green bellpepper and usually serve it with a side of brown rice and sometimes some calabasitas: in a skillet cook some chopped up zucchini (usually 2), onion (1/2 of a lrg one) and tomato (2 Roma) in a little bit of olive oil. Once the zucchini is tender throw in about 3/4 can of corn and cook fir an addt'l 2 min. Remove from heat and top with some shredded Monterey jack cheese. - chsrkat77  244.0 #1342 10:09AM

Mango-Strawberry Salsa- 2 tablespoons balsamic vinegar 2/3 cup orange juice 1/4 cup lemon juice 2 tablespoons lime juice 2 diced fresh mango 2 pints strawberries, diced 1.Stir together the balsamic vinegar, orange juice, lemon juice, and lime juice in a large bowl. Mojo Criollo Sauce 2 bunches chopped Italian parsley 1 Minced garlic bulb 2 T. Concentrate Orange Juice 1/2 C. Extra virgin olive oil 1 lemon zest 1 t. Kosher salt 1/2 t. Fresh ground pepper Finely chop parsley and place in middle of clean kitchen towel and ring out the liquid. Unless they provide a designated pet area outside, dogs cannot lick the plates/utensils, who cleans up after a dog accident......No pets in at a restaurant for now (service dogs are the exception). Disney is excellent with their food cleanliness in the parks per the Public health inspections. DTD does not fare as well per Retaurarant inspection. Check the Health Care Agency for the current restaurant inspections. As a Public health nurse I always check to see who is keeping clean in their kitchens.
