Canned chopped ocean clams would be my guess. It's what I use at my work as well for clam chowder.
diced onion, diced celery, crushed garlic, simmer with butter then add flour to make a roux, toss in some clam juice and a dash of white wine, salt, white pepper, dill, chopped potatoes, once potatoes are al dente add half n half, near the end of cooking toss in the clams and cook until tender. - DuffysJuju

They use Boudin sour dough bread. Maybe it's their clam chowder too. I've had it in San Fran by the warf & at Disney and from the Boudin website that I ordered for my son who loves clam chowder. All tastes very similar. Try Boudin clam chowder (New England white) and their bread bowls. - familyluvsdisney
